FINGER LICKING FRIED CHICKEN

I hope everyone is staying safe and healthy during this stressful time. I hope and pray that everything will go back to normal soon. With the children home all day and all week means a lot more time in the kitchen whipping up meals for the family. I don't know about you, but my kids eat almost around the clock, so it's important for me to cook up different meals for them so they don't get bored eating the same meals.

On today's blog post I'm sharing my Finger Licking Fried Chicken recipe that gets rave reviews everytime I make it. 

This fried chicken is to die for! It's so juicy and so flavourful and my family can't get enough of it. The secret to getting the flavour and juiciness is by brining the chicken.The best part is it can also be made ahead of time for big gatherings and heated up just before serving.  I've done that many times and it's even tastier in my opinion. So if you're ready let's get cooking! Or should I say...FRYING! lol

BRINE INGREDIENTS:

A package of chicken (any part of your choice)
4 Tablespoons seasoning salts
1 Tablespoon suya seasoning (optional)
2 Tablespoons cayenne pepper
1 Tablespoon black pepper
2 Tablespoons garlic powder
Water for brine

BREADING INGREDIENTS:

2 Cups of flour
1 Tablespoon seasoning salt
1 Tablespoon cayenne pepper
1 Tablespoon black pepper
1 Tablespoon suya seasoning (optional)



PREPARATION:

Step 1:

In a large air tight bowl mix all the ingredients with water (not a lot to begin with, add in more as needed to cover the chicken). Stir to mix all the flavors together and submerge the chicken in the brines and stir again. Once you're sure all the chicken is submerged in the brine, cover and let it rest in the refrigerators for 24 hours or more.

Step 2:

In a larger zip lock bag add in all the breading ingredients and mix well. In the mean time, take the chicken out of the brine and place in a colander to drain off excess water. If the chicken is too wet, it will clump up the flour mixture. Ensure the flour covers the chicken evenly to get the best result.

Step 3:

In a large cooking pot or deep fryer, which ever you prefer, preheat oil (enough to cover the chicken) up to 350 degrees. Shake up the chicken in the coating one last time before you put it in the oil to fry.

Step 4:

Keep a close eye on the chicken and flip as needed until it's golden brown. I literally time and fry each batch for 12-15 minutes (sometimes more) to ensure that it's well cooked in the inside as well. There's nothing worst or embarrassing than eating fried chicken and discovering it's raw inside while the outside looks done.  Timing it helps ensure it's perfectly cooked  inside.  It also helps to use your instinct and or poke the chicken to see if the juices coming out are clear and not bloody. Whatever you prefer, the idea is to make sure its thoroughly cooked.

Step 5:

Place fried chicken in a colander, or on a rack to rest. Then serve it with your favourite side or just by its self and enjoy!
